Ingredients

Pie Crust Base
- 90g unsalted butter, softened
- 40g sugar
- 100g almond flour
- 120g all-purpose flour
- Pinch of salt
Lemon Cream Filling
- 45g lemon juice
- 15g lemon zest
- 45g sugar
- 45g eggs
- 55g unsalted butter
- 1.5g gelatin sheets, softened in cold water
Cake Glaze
- 5g gelatin sheets, softened in cold water
- 360g hot water
- 15g lemon juice
- A few drops of red food coloring
Raspberry Cheesecake Mousse
- 75g sugar
- 30g water
- 45g egg yolks
- 200g cream cheese
- 15g powdered sugar
- 50g raspberry juice
- 7g gelatin sheets, softened in cold water
- 250g heavy cream, whipped
Toppings
- Fresh raspberries as desired
- Chocolate decorations as desired

Step 1: Make the Pie Crust

1. Mix the butter, sugar, almond flour, all-purpose flour, and salt together until it forms a smooth dough.
2. Chill the dough in the refrigerator for 2 hours.
3. Roll the chilled dough to about 5mm thickness.
4. Use a round mold to cut out the pie base.
5. Bake at 170°C (338°F) for 11 minutes until lightly golden. Set aside to cool.

Step 2: Make the Lemon Cream Filling

1. In a small saucepan, combine the lemon juice, sugar, and eggs.
2. Heat gently while stirring until it’s just about to boil, then remove from heat.
3. Add the softened gelatin sheets and stir until completely dissolved.
4. Mix in the butter and lemon zest until smooth.
5. Pour this lemon cream into small molds and freeze until firm.

Step 3: Prepare the Raspberry Mousse

1. Combine sugar and water in a saucepan. Heat until the syrup reaches about 121°C (250°F) with small bubbles.
2. Beat the egg yolks at medium speed in a separate bowl.
3. Slowly pour the hot sugar syrup into the egg yolks while continuing to beat. After all syrup is added, increase speed to high and beat until fluffy.
Prepare the Raspberry Mixture:
4. Heat the raspberry juice and add the softened gelatin sheets until fully dissolved.
5. In a separate bowl, mix the cream cheese with powdered sugar until smooth.
6. Fold the raspberry mixture into the cream cheese mixture.
7. Gradually combine this mixture with the whipped egg yolks.
8. Finally, fold in the whipped heavy cream until smooth and airy.

Step 4: Assemble the Cake

1. Spread one-third of the raspberry mousse into the mold.
2. Using a spatula, coat the mousse along the inner walls of the mold.
3. Place the frozen lemon cream in the center of the mousse.
4. Fill the rest of the mold with the remaining mousse. Smooth the top with a spatula. Freeze until firm.
Prepare the Glaze:
5. Dissolve gelatin sheets in hot water, then add lemon juice and red food coloring.
6. Once the mousse is firm, gently poke small holes on the surface with a skewer or toothpick. Then pour the glaze over the mousse to cover it completely.
7. Carefully invert the cake onto the baked pie crust base.

Step 5: Decorate

1. Top the cake with fresh raspberries.
2. Add chocolate decorations as desired.
3. Your French raspberry mousse cheesecake is now ready to serve!
